- for each serving, place one demitasse full of fresh water in the pot
- for each serving, put one heaped teaspoon coffee (5g) in the pot along with sugar to taste (for medium sweet coffee, one spoonful for each serving will do)
- stir the mixture thoroughly over low heat
- when the coffee froths up, pour a little of the foam into each cup
- return the cezve to the heat and as soon as the coffee froths up again, pour it out into the cups
- never stir the coffee once it is in the cups and be sure to sip it gently so as not to disturb the grounds
- turkish coffee is always served with a glass of fresh water
the distinctive flavor of turkish coffee, its light surface foam, and its fragrance as well as the special way in which it is prepared and offered all combine to give it a unique identity.
